Custom Fields ?
Is there a way to add custom fields, which can also be included on project's issue list view?

Not at this time. What custom fields would you need, out of curiosity? You *could* exploit the tags field for many different things (i.e. tag by browser, due-date, category, version, type of issue, discipline, etc.)

was mainly looking for a field where my users can select a version number, or a product category for example. options should be configurable by an admin.
tags are nice, but not really a reliable way to capture the data, as it requires users to type things in the same manner, and not easy to add new options. I've seen some competing "simple" products allows for this.-
I completely agree, sometimes you need m,ore structure than this product allows.
We need the ability to add custom fields. -

I would like a custom field on the person page: Team. This way I can track which team the person belongs to within the company.

I would also like this. Some of my clients have multiple websites that I support. I want them to enter which site they are asking a question about. The client can't be relied upon to do tags, or to even remember to state which site they are having an issue with.

A url field would be handy. Something appended the comments, just with the link text being 'URL' or somesuch

I'd like to be able to create an 'estimated hours' field to record how many hours a certain bug took.

Agree with TetonGravityResearch
the only thing missing for me is a time estimation of how long it will take to fix. Based on this, the PM will determine which issues are in a release (which they can use tags for, but I'd prefer a list view so I can assign multiple issues to a release in one go) -

Yes ! Time estimation would be awsome. Our customer post usfrequently new features instead of bugs, we need to be able to estimate work in hours and then "move" theses features into a release. The release should show the total amount of work scheduled in these estimates.
